Pints- 75 min processing at 10 lbs pressure
Quarts- 90 min processing at 10 lbs pressure

I have 2 pressure cans. Last year I made it a mission to learn....how to pressure can green beans. I pressure canned green beans 3yrs ago. Failed horribly. I did everything wrong. Alot water siphon out. Just all around bad. Last sat down with my canner instruction booklet and watched videos on YouTube. I had an awesome canning. 86 pints of garden fresh beans. Store bought can't touch these beans. I gave some to my family...it reminded them of old days of home canned food. Just can't beat fresh produce....home canned. Sooo much better for you too. Ty Jess for making this video. I want to learn how to pressure can....other foods to now.

Just a couple tips: If you add apple cider vinegar to the soak water, drain as normal and boil in fresh water, it helps reduce the gas-inducing properties in beans. Also, if you don't use the cooking water, but strain and use either fresh water or plain broth as canning liquid, it can increase the flavor of the canned beans.

Always drain off your original bean rinse water!! The beans leaked out their lectins, which are bad for your digestive tract. The lectins are what give you the bloating and gas after you eat beans. That is the whole reason for soaking them, plus you want them to swell in size, of course, so you will have a proper headspace. I don't think people realize that. I love to can beans, too!

I just used my pressure canner for the first time last week. I started with Veggie Scrap Stock because I knew that if I messed it up, I wouldn't lose food of any significant value. Turned out great! And the whole process was way less intimidating than I thought it might be. So beans is going to be my next project. Then, some chicken bone broth.

Thanks Jess….I’m going to try it again! I didn’t have much success with the things I’ve canned before but with your knowledge and understanding of the process, I’m going to try again! I want canned foods in my pantry. Now I only have store canned because my failure at canning was trying to be self taught. I need to SEE and UNDERSTAND what will/can happen…You show me what I need and can do! So, I’m going to try it again! I’m 74….never too old to learn a new thing!!! Thank you so much!!!!❤❤❤

Awesome video! I just canned some beans yesterday before seeing this. I do pints most of the time.. I soak them inside the jars instead of one big container because it helps me know how much beans I need to soak. So I do 1/2 cup dry beans in each jar, fill them up with water, and leave them on the counter overnight. Then I pour that water out, rinse them once, and refill them with fresh water. To avoid the temp change, I don’t pre-cook the beans but I do put them in the canner before I turn it on so they gradually warm up with it. Seems to work well, but I loved seeing the way you did it too! Thanks!

I am 60, and canned with momma growing up. We used her mother's pressure canner. I am proud to know that when momma was no longer comfortable using it. It's hard when you have arthritis in your hands. I love knowing that the Maid of Honor canner on my stove is the same one grandmother used.

IMHO, this is one of the best pressure canning videos (beginner or not) out there. I wish it would have been available when I started pressure canning. It may have prevented a few grey hairs! Wonderful teaching style and solid foundation information.

Jess, i’m going to bust out my brand new canner and can some beans, so that I can be ready for this year‘s harvest. However, I have to admit… I wimped out and bought an electric pressure canner. 😂😂

Hey - No vinegar trick to keep the scum from building up on the outside of your jars? I always throw in a splash of vinegar whether I am water bath canning or pressure canning. Really does wonders for clean up before storing.

You have been pressure canning longer than I have, but one thing I learned is to never use a knife to debubble the jars. It could (over time) scratch the inside of the jar creating weak spots that can fail sometime down the line.

I have an awful glass top stove and don’t trust it with a stove top pressure canner. So, I treated myself to an electric pressure CANNER.
I love it all the worry is gone! I can beans and meats and pressure canning tomato pasta sauce gets it so smooth.

You no longer have to sterilize with water bath canning as long as you process 10 minutes or more.
