This is Chinese salted egg yolk. My hometown used to be a fishing village and fisherman wife's uses egg white for fishing net repair and the the leftover egg yolk will be salted, dried and sold.
Whenever my mom was too busy cooking dinner she will steam salted egg yolk with rice, it was my version of comfort food.

Great video and very interesing! One bone to pick: she says the pasta with cured egg yolk crumbled over it is "kind of like a vegetarian carbonara", but the egg yolks are treated with bonito, which comes from fish, so actually the dish would be pescatarian, not vegetarian. Just a quibble.

Can you reuse the salt sugar mixture? If so, how do you store it? How long does it keep? Or did this become a recipe for those who doesn't care about waste?

This is right up my alley! Especially when she broke out the chive blossoms! I don't know much of anything about cooking, I just use what i have on hand and try out what I think looks/tastes good. I made an omelet with chive from our garden and put the blossoms on top, it looks really impressive! Also, chinese moon cakes sometimes have cured yolks inside. I always wondered how they made them, so this is great. Personally, I don't like yolks on their own but using the cured version in cooking sounds great.

I love the idea of using dried fish in vegiterian food. Would it work switching the bonito for bacon? I feel that bacon has a better flavor profile for vegitarian dishes.

Quick question: Is there any way to recycle the salt mixture for other cooking purpose or you could reuse it for the next batch of it or something else ?
