Pullovers gave me a bigger chest (i dont train chest)
A variation i like is with two dumbbells (one each hand) to stretch the ribcage
I swap variations between the barbell pullover, and with one or two DB when my body gets tired

Could one also do these exercises on Gymnastic rings or a straight dip bar/bench with their bodyweight to achieve great results?

I have trouble feeling my rib cage when doing pull overs. I only feel it in my lats

when I do this version with dumbbell I feel more in lats but when I do it while my full body on bench I feel it in the chest
