Asian Pickled Cucumber

Make this super easy and flavourful pickled cucumber side for your next meal.

Ingredients:
2 long English cucumbers
1/2 cup rice vinegar
3T sugar
pinch crushed red pepper
salt to taste

Instructions:
1. Thinly slice cucumbers and place in a small bowl. Lightly salt to taste and stir.
2. Dissolve suger in vinegar. Add red pepper and pour onto cucumbers. Stir well.
3. Let marinate, stirring occasionally for at least 3-4 hours.

I love this recipe I've been making this with red onions for several years now. It sure beats the 7 & 3 day pickle process I learned growing up.

I just made this. I know it’s going to turn out good. But next time I think I’ll add diced red onion and a 1/2 tsp of sesame oil. Oh and serve it with sesame seeds on top of the finished salad. YUM!

Thanks for the video, I was looking for fresh thing to do with all the cucumbers that I've grown, way to many this year! I also see your video in the background a bunch of syrups and soda. I've just built out a co2 tank and small keg for carbonation, and was curious if you've done soda videos? I'm also now learning more about essential oils and flavoring.

Instead of salt, sugar & pepper flakes I added 2 tablespoons thai sweet chili sauce to the vinegar, came out yummy🙂

Unlike many sunomono recipes, this recipe doesn’t require sweating the water out of the cucumber using salt, waiting 5 minutes, then squeezing the water out to improve texture.
