I have ARFID and you channel has been a lifesaver for getting more balance amidst a lot of my safe foods not being super nutritious, having ways to make the stuff I can comfortably eat that is more nutrient dense more enjoyable has been a great start to trying to be a bit healthier while working on recovery

yummy. My family is from Hungary and the traditional way we've always made this is super similar! It's essentially the exact same recipe, but instead of Korean chilli powder you use sweet paprika! Just thought I'd share if there's anyone out here who wants to try but isn't the biggest fan of spicey stuff :3

Recipe for those who want it:
Cucumber
Salt
Gochugaru (1/2-1 Tbsp)
Rice vinegar (2 Tbsp)
Sugar (1 tsp)
Sesame oil (she didn’t say a measurement but it looked like between 1 tsp and 1 Tbsp)
Minced garlic
Sesame seeds
Green onion

1. Slice cucumber
2. Add salt to cucumber and let sit for 10-15 mins
3. Drain water from cucumber
4. Add all the seasonings and mix thoroughly!

I have Crohn's Disease and was diagnosed in 2022 and initially I REALLY missed so many foods that I knew were triggers, my mine ones are any kind of pepper so bell, chilli, sweet etc. Also in any form fresh, dried etc. It meant so many cuisines I love I could no longer eat, so a lot of south east Asian and mexican as they were my faves.

Now I have absolutely zero desire to eat any because I know the excruciating pain I will be in if I do and it lasts days and sometimes weeks. It's just not worth it to me anymore.

I say all that to tell you just how much I love your IBS friendly recipes! There are SO many over laps with IBS and IBD and you have really helped me be inspired again to cook and experiment in the kitchen again. I lost my live of cooking for a while because of my diagnosis.

So Thank You! ❤❤❤

I have introduced people to cucumber +lime +tajin (also a chili pepper powder-mexican) my favorite way to eat many vegetables and some fruit ❤

I eat this for lunch almost everyday because of seeing your recipe. The way I make it is a bit different, I can’t have sesame oil, so I do this gluten free gochujang sauce, salt, pepper, garlic, rice wine vinegar, and I add a little kimchi on top. I love it, and I’ve been loving it since I first saw you do this. Thank you for your content. It’s really meaningful for people like me, who have struggled with ED and other health issues for most of their adult life. ❤

My family would often just eat cucumbers in seasoned rice vinegar. When I was living in Japan it was such a quick and easy veggie option for tired nights after work.

This is basically an oi-muchim which is like korean cucumber salad. Very delicious. ❤

Oi muchim! You can also add a little bit of fresh ginger to soothe your stomach. It’s not as common but a local Korean restaurant prepares it that way and it’s so good.

Here's a cucumber recipe from my country, Bulgaria! It's called tarator and it's a really refreshing cold soup we eat in the summer. You mince or chop a cucumber into small cubes (at home we prefer it minced, others prefer cubed). You add sour yoghurt (you'll most likely know of Greek yoghurt, though Greek yoghurt is a bit sweeter). You can add sunflower oil or olive oil, salt, dill, some people also add walnuts and mix them all up. Finally, once mixed well, you add cold water and enjoy! At home we usually use the same container the yoghurt came in for the water - and so, if you use 2 yoghurt containers, you'll fill them both with water and pour into the soup. It's really easy to make and it's really refreshing and filling!
