HOW TO MAKE THE BEST EASIEST AFGHANI KABULI LAMB PULAO RECIPE 😍🇦🇫😍🇦🇫!!
I love most kinds of rice but Afghani Pilau is definitely my all time favourite. It has the perfect combination of salty, sweet, meaty and different textures. There are a lot of variations of this Afghani classic but this is my version, similar to the kind that you find in Lahore, Pakistan.
People assuming that Kabuli Pulao is difficult to make but it really isn't, you just need to follow the my super easy recipe and you're good.
INGREDIENTS:
BROTH:
- 1 kg lamb (preferably lamb shanks)
- 2 ½ large cups basmati rice (washed & soaked)
- 4 large cups water
- 2 black cardamom pods
- 1 tbsp whole garam masala (spice mix)
- 3 tsp cumin seeds
- 1 ½ tsp salt (as per taste)
RICE BASE:
- ½ cup oil
- 1 large onion (sliced)
- 2 small tomatoes (sliced)
GARNISH:
- 125g carrots
- 100g raisins or sultanas
GARNISHING SPICES (roast + crush):
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 1 cardamom pod (yellow is preferred)
INSTRUCTIONS:
1. In a large pot, add all of the broth ingredients to a pot and boil till lamb is tender.
2. Once boiled, set lamb aside and strain the broth.
3. In a separate pan, sauté carrots in a bit of oil until they soften, remove. Add raisins, cook until almonds are golden. Set aside.
4. In a separate pan, add the garnishing spices and heat till fragrant, only 1-2 mins. Then crush. Set aside.
5. In a large pot, heat oil over medium heat. Add sliced onions, cook till golden brown.
6. Add tomatoes, cooked lamb shanks and lamb broth, bring to a boil.
7. Add washed and soaked rice, boil till al dente or till holes appear, about 15 mins.
8. Top the rice with the most the garnishing spices & raisins + carrots.
9. Cover with foil and steam (dumm) on low heat for 15 mins.
