I had to return to say i made this recipe when I was sick and it cured me! I absolutely love this recipe and even add it to different dishes because it actually enhances my recipes!!Thank You Chef John!

I did the recipe. A jalapeno marinade that blows your head off is a miss. Absolutely not the case here. I can taste the fruitiness of the jalapeno itself. Actually not hot at all but delicious.
Update: 29/12/2022, I just made an other batch of jalapeno marinade. love it. Thank you Chef John.

I’ve made these about ten times since finding this recipe. Never using raw jalapeños again, these are amazing on tacos, nachos, burrito bowls, everything!!

If you instead put the jalapenos in the jar and then pour the boiling brine over, they will retain their color and their crunch. Let them stay for a week or so in the fridge for maximum taste :)

I used to boil my brine but these days I just wash and pack my vegetable of choice into a jar +garlic (aromatics if you like). Boil some water from the kettle and add a bit to it to some salt (rock salt) to dissolve it a tad. Then I add disttilled vinegar to the jar (about less than halfway) the salt and water mixture add a bit more of the water from a kettle then top off with regular water.

Faster works everytime. If people want precise measurements then find a recipe online because I ain't your guy for such things.

Thank you so much for your recipes. This is the 3rd time I have made them. Love them! No need to buy from store. I bought 10 large jalapeño and some pickling cucumbers to make 2 batch each. $3.00 spent. By the way I used only 2 tbsp of sugar. Also did not follow direction once and boiled one batch for the 10 minutes. Wow did those come out hot!

I just like to take the old juice from store bought jalapenos and when Im doing eating those save the juice and put my own peppes in that and let them sit for over 30 days in the frig. Works out pretty good.

I don't rinse, I got this just how I like it, never buying the mushy stuf again. Thanks so much for this great recipe.
1 tsp. sugar, 2 Tbs. salt, 2/3 cup white vinegar, 2/3 cup water, 5 sliced jalapenos, 1/4 sliced onion, 8 carrot slices, small pinch oregano. boil, add everything, cool, put everything in a big mason jar, cool completely, cover and refrigerate. good and spicy. I eat them with my burritos- refried bean, mexican rice, (taco meat or rotisserie chicken and hot sauce), cheese, rolled in a big softshell, put on foil with a spray of oil, put in 350 oven for 25 minutes. Have with sour cream, guac, shredded lettuce with ranch dressing and pickled jalapenos. It's hard to eat the whole thing.

Thank you for pronouncing jalapeño correctly. Nothing irks me more than people that say "jalapeenio". There are zero words in the Spanish language that make the eeee sound! 😉👍
