It’s basic, but my guilty pleasure of these instant ramen packets is just pouring off almost all of the noodle water and adding the dry “soup base” packet in at the end to make a stronger, thicker sauce. I had some thinly sliced sandwich beef leftover last week, tore it to shreds and mixed it in with the Shin ramyun to warm it through. Amazing 🥰🥰

One of my favorite ways to elevate shin black is to add an egg yolk and kewpie Mayo to the serving bowl, mixing that together, and then slowly stir in the hot broth so the egg cooks but doesn’t scramble. It creates a nice creamy broth and cuts down on the spice a little so you keep slurping it down. I will also add nori sheets or spinach and sometimes a ramen egg if I’m really feeling fancy.

I love shin ramyun! Lately I've been hooked on boiling the noodles with minimal water, letting most of the water evaporate out, and stirring in a separated egg yolk. Rich, creamy, and delicious.

The fact the Shin Ramyun flavour packets seem to have slightly less salt than other ramens makes it so much more versatile. I used to love making a simple dry version where I make a sauce with the flavour packet, some sesame oil and a bit of the cooking liquid. I was initially suprised it wasn't too salty at all which was great. I now make a slightly less dry version when I don't feel like soup and mix the flavour packet with a bit of sesame oil, kewpie mayo, an egg and the cooking water. It turns into a rich creamy sauce and is almost fool proof. I can't wait to try these some day!
