To everyone: A cartouche is no substitute for a lid when you are boiling something. For simmering and to hold something warm it‘s okay. Everything above that = not okay… atleast if you don‘t want to eat paper…. Especially in a stew or something similar to that. Hot parchment paper rips easily apart. Trust me, I saw that happened at work.

That's a Real it from a Cordon Bleu taught me the Catering Link your Foil Folding Technique for Large Pans.
I used this for Foui Grasses, and other Aspic Meat Mushroom Silliness.
I have that I'm always on the Lookout for a cheap Big Ass Round Heat Safe product, so I can use it when I need got ' em all😉

Also if you scrunch the paper up, open it and scrunch it back down again then open it, you can press it into corners much easier.
