Ancient kiln of some sort, I went to an old farm in Wales and there was something like this and apparently it was for burning wood to make coal or charcoal, it was smaller though, but very similar looking

Its called a chimney, people would light fires at the bottom of them and convection would help disperse the smoke from the fire at a high level.
