Why Are There 2 CPU Power Connectors ?
The CPU power connectors are to provide improved system stability and increased power delivery to the CPU. Having a High-end CPU with high power consumption require more power to function properly, and having two CPU power connectors ensures that the CPU receives enough power to operate efficiently.

A 4-pin connector can deliver up to 192 watts of power

A 8-pin connector can deliver up to 384 watts of power

I remember way back in the late 90's we called these Xeon power connectors because that was the only motherboards that used them. Many other boards still used the 4 pin Molex (Hard Disk) style connectors for aux power. My old workstation uses two of these due it having dual Xeons (x58 platform).

Not that I am contemplating a new build but a good video for those who are.

In simple terms usually it comes mostly in 4 pin connector for Overclocking stability as stated by ZTT

One issue I found was....the PSU I purchased only came with one 8-pin CPU connector and never came with two 8-pin CPU connectors. I had to buy another cheap PSU to get the second connector.

Does it work the same way around whenever you plug in 2 8-pin connectors in the psu? In this case the motherboard has just 1 8-pin connector

You dont need both at all just you the one 8 pin. Its only for overclocking stability. 384w i914900k does even near that so your chilling.
