REAL CARBONARA with Guanciale and Pecorino Romano

Carbonara is traditionally made with guanciale and Pecorino Romano cheese, but pancetta or even bacon is fine. I'm just showing the traditional way with guanciale, Pecorino Romano cheese, eggs, pepper, and pasta water. 100% no cream! I hope you enjoy this authentic carbonara recipe!

Carbonara Ingredients:
-1 pound spaghetti or rigatoni
-6 ounces guanciale or pancetta
-4 large eggs
-1 cup grated Pecorino Romano cheese
-1 cup pasta water
-1 tsp coarse black pepper

..and there, right in the first sentence, is what i love about your videos!: "i dont care what you use, it doesnt matter"...because thats pretty much how my cooking works .. and for people that maybe dont cook much, or are new to cooking, its far more helpful than reciting a list of ingredients most of us have never heard of..for me, cooking is the most relaxing thing i can do, shouldnt be a trial! another lovely reicpe! (ive always been guilty of going the cream route before!) thank you!

Exactly how it should be. The residual heat from the pasta is all you need to bring the sauce together. Love it with lots of black pepper and a little nutmeg. When made properly, like this, carbonara is one of the most satisfying and delicious pasta sauces. Thanks Jim.

I've been making this for years, but have yet to try it with rigatoni pasta. Looks like a fantastic choice, as far as something that holds the cheesy egg and meat bits! Will give it a shot next time. The Guanciale looked incredible - you probably could have used twice as much in this dish!

Love when I make this dish and people are like what is this? Lol. I just never add the heavy cream and Buccattini is perfect for this dish the thick sauce really coats it greay. I was always using the traditional Linguini or Spaghetti which pairs better with my Zuppa Di Pesce Dishes. It comes out Brooklyn Style 👌great clip and love the new Pea Soup Clip 🍲 👍🤝

I have never done much cooking myself (outisde of boling water for pasta and using anothers sauce), my mother is Italian and an excellent cook and my wife has become a great cook. I just retired and came across your videos and decided it was time to start, so making this tonight. Also making your Italian hero sandwich for Saturdays motorcycle ride and Caccio E Pepe for Monday dinner. Thanks for making the great to the store!

In Germany in the early 1980’s, we lived across the street from a family owned Italian restaurant...my introduction to Carbonara. I’ve been making it for 40 years, trying your recipe tomorrow for dinner.

Somehow, over the years ( I used to cook this once a week for my kids... they're in their late twenties now) this recipe got away from me, inexpensive cheese, eggs in too quick, bacon etc.
I wanted to get back to authenticate carbonara. Thanks. Love your channel. Love your recipes. Great work .

I'm late to the game with your videos but boy do I love them! My 18 year-old grandson recently ate his first carbonara in an Italian restaurant and said he wanted it to eat it everyday! I've decided to make it for him and I'm going to use your delicious looking recipe. I don't see how many servings it made. How many people would this recipe feed?
