How to Use the Bialetti Moka Pot Express for Espresso

The Bialetti Express is an all aluminium stovetop espresso maker, or you may refer to it as a Stovetop Percolator. It’s the ideal coffee brewer to make strong brewed coffee and you can easily take it on the road travelling or camping because of its compact size.
They come in various sizes from 2cups all the way up to 18 cups. Today I’ll be brewing coffee using the most common cup model.

What I’ll first do is weight out and grind my beans Today I’m using the Welhome Coffee Grinder and what I’ll usually do to get the right amount of coffee is simply use the filter basket to achieve that right amount of beans… you’ll never get it wrong this way ..but in weighing your coffee the basket holds approximately 30grams.
You want to grind your coffee to a fine grind. Nothing too coarse or your espressos won’t be strong enough.
Place the grounds in the basket and I’ll flatten down the grinds gently to create a smooth surface
Next, I'll fill up my heating vessel with water to just below the pressure valve, which is 250mls of water - and it’s best to use heated water to fill the vessel as this will speed up the whole brew time and make your coffee less bitter.
Place the filter basket on top ensuring the surface around the rim is free of any groundsAs we want it to make a nice seal when we screw down the coffee collector to seal the top of the heating vessel
Next place it on the stove on medium heat… you don’t want you’re water to boil too fast as this will again produce a bitter coffee so I’m aiming for a heat that lets the pressure gradually rise and then the water will slowly percolate through the bed of coffee.
It should take a total time of 5 mins or so to finish brewingIt will start off slow and speed up at the end and you’ll know when it is done as the water will begin spurting out, you don’t want to leave it on the stove if there’s any steam.Turn off your heat and pour out your coffee into your cups.I’ll enjoy my coffee straight black but they are the perfect strength to add some milk for a delicious flat white.In cleaning the unit, you do want to wait for it to cool down , rinsing it under cold water can speed this process up. Once it is cool, Unscrew the top, remove the filter basket and Tap out the grinds - so long as everything is cold, I find blowing on the end of the funnel gets the grinds out very easily., rinse everything under the water and it’s really important to keep everything thoroughly dry before placing it back together if you want to avoid any oxidation of the aluminium or build up of burnt coffee.

This moka pot is designed to force water vapor through ground coffee to produce Italian espresso in minutes. With air and coffee oils interacting with this intensity, a velvety crema forms a layer atop the rich espresso.
The Bialetti Express comes in seven different sizes to accommodate any family or coffee habit. The cup sizes are measured in 30 ml espresso cups.
The body is made from aluminum alloy, a food safe and durable material that won’t taint the flavour of your espresso. The handle and knob are built with black acrylic and can be handled when the aluminum is hot. We suggest sticking to warm water and soap for cleaning, and advise against using steel wool or a dishwasher.
Many around the world still own and use their 80 year old Bialetti Express moka pots. The device is simple and durable enough to continue to be a classic espresso maker.

Just a quick note that Bialetti recommends NOT pressing down your coffee grinds. I think doing this makes it harder for the water to pass through them. Just let them fall into the filter, shake it to level it out, and gently swipe away any excess. They also recommend low-medium heat when brewing.

hot water is key, the only things i do differently is go a little finer on the grind and i don’t wait until the top is full, i pull off heat and pour once the dark brown coffee starts to get light

For those who are not comfortable with aluminium, Bialetti also offers their products in stainless steel. I am using the mokapot now for many years and once you get the grind size right, makes an excellent coffee. Of course straight out from the mokapot the brew is concentrated almost as an expresso. In order to make a good strong coffee I normally add the same amount of water. 
Depending on usage you need to clean the mokapot every 1-2 months with a mild dishwash detergent and a brush. Afterwards I run clean water with added lemon juice or similar on the stove and then another run just with water. The result is a sparkling clean mokapot without any old coffee residues or odour.
