I worked at Buffalo Wild Wings, and we used plastic containers with lids, put the sauce in it, added wings and shook! Evenly coated!!

Dry them with a paper towel and then mix salt and baking powder with the wings. Let them sit for an hour in the fridge. This makes EXTRA crispy wings!

Mmm....crispy chicken wings, ready for some hot sauce! I hope you guys enjoy this video. I wanted to point out you can of course do this in a pot on the stove (deep-frying) but it is just a little more of a challenge to keep the temperature right. And another thing, of course you can do this on the grill/braai...but thats a whole different thing! And I will share with you my method of doing that in the future too...and my marinade and dry rubs that I put together!

Just got excited when I saw you link to your recipe for buffalo sauce. I no longer live where it's readily available. Looking forward to trying it.

Also, for extra crispy wings, I coat mine in 50/50 flour and corn starch or potato starch. For shatteringly crispy, just corn starch or potato starch. Those stay crispy even with the sauce on.

This recipe bis awesome, this is so I don't have to watch the whole video everytime I want to make them

To dry the wings:
Flour (1.5 tablespoon for a kg)
If not using sauce add the spices
(Bonus tip use a bit of baking powder)

Frying:
Temperature: 190°C
12-15 minutes

Sauce:
Butter and hot sauce (around 50/50)

I made these wings twice so far. They are the best tasting wings my family has eaten. Crispy on the outside and moist and tender on the inside. Thank you so much for showing us your wing recipe.

Try it with a bit of cornmeal next time instead of the flour. One of my local pubs does it that way and it's super good. The texture of the light cornmeal coating is fantastic.

I do mine with rice flour, but use baking powder also. It reacts with the skin to make it super crunchy.

Needs to be bonus crisp, salt pulls the surface moisture, dry w a papper towel and dredge w rice flour.

nice i usually cook mine in the weber with a homemade vortex like device
indirect high heat about 300c sometimes ill add a small chunk of cherry
skin comes out crispy smokey and very tasty.
cook for about 45-1hr

In the US we call beef drippings Tallow. Popeyes uses tallow.

Mmm those look so good! What I do is batter my wings then dredge in flour then fry. It's an extra step, but they come out moist on the inside, and the thicker crust holds more sauce. That being said, great vid!

Beautiful... I’m British and now live in USA and when I ask where the beef dripping is located I get 👀😏. The simplest ingredient that should be easily available in Texas with all their cows! I have to order some from Etsy now after this video, at a horrendous price no doubt but you have prompted me to want real fried chicken, chips and battered fish ...the British way. Great video thank you.☘️
