3 EASY AND DELICIOUS VEGAN THANKSGIVING SIDE DISHES | PLANTIFULLY BASED

Hi friends! Today we are beginning my Thanksgiving Recipes! First up are vegan side dishes sweet potato casserole, an autumnal vegetable medley and cheesy cornbread. They are all so good!!

SWEET POTATO CASSEROLE
4 sweet potatoes, peeled and roughly chopped
3 cups non-dairy milk
2 tsp vegan butter
3 tsp organic brown sugar
1/4 tsp cinnamon
Salt to taste
1 bag of mini marshmallows

VEGETABLE MEDLEY
1-1/2 cups brussel sprouts (8 oz or more)
1 1/2-2 cups cubed butternut squash (10 oz or more)
1/4 cup craisins
1/3 cup walnuts
1 tbsp olive oil
2-3 sprigs of rosemary
2-3 sprigs of thyme
1 tbsp maple syrup
1/4 tsp garlic powder
Salt and pepper to taste

CHEESY CORNBREAD
1 box of vegan friendly cornbread mix (Trader Joe's, Jiffy Mix, Gluten Free Bob's Red Mill)
1/3 cup vegan pepperjack (or any vegan cheese you like)
Splash of non dairy milk
