I think the Pixel outperforms the iPhone in most categories, but that is always subjective, save for the inconsistencies that you mentioned. The iPhone has better audio, because the Pixel's noise reduction could be a bit more aggressive and "thins" out the audio.

You are spot on when you said Apple have for years over saturated the iPhone photos. I have noticed it too so you are not alone and have mentioned it in past iPhone comments.
I read that Google are putting out a fix for the Pixel 8 camera which should resolve a lot of the problems we see here in your video. But not much between them really, swings and roundabouts as the saying goes. Be interesting to see in a few weeks when Google update the camera with the fixes how it then compares. As with all new phones the makers always put them out without fully testing them it seems. They rely on the public to give the feedback how ever annoying it is to then improve on them. That is really annoying. I would say never buy a new phone until it's been out for about two to three months by then a lot of the problems would have been discussed and possibly fixed.

To me Pixel photos look more natural and dramatic. One thing not mentioned here is photo post-editing that can be done quickly on the phone itself. I have both phones and Pixel has so many more options to get a picture to it's full potential.

I prefer the Pixels approach as it preserves the highlight and the shadows and still maintains the contrast for which pixel images are famous. A point to always keep in mind is iPhones images are 24MP as opposed to pixel with only 12MP in default settings so all the zooming in to highlight that pixels images are a tad bit softer sometimes is unfair I believe. If you really wanna compare what each system is capable of why not shoot in full resolution at least in daylight.

For the photos, I prefer the Pixel! The way it processes photos make the highlights much more pleasant to look at. The iPhone brightens the photos a bit like my S23, and I'm not a fan of that. With the Pixel you can always edit it slightly afterwards for a more saturated look. For videos... iPhones for sure.

I wish you would have done an interior HDR test with both phones video capability. If the phone can bring the window into view while keeping the interior bright, this is one of the best tests you can do.

I would go for the Google Pixel 8 Pro as the camera system and Magic Editing AI are unbeatable. With the Pixel 8 Pro, I am sure one could get even better results from adjusting the ISO, shutter speed, and so on.

There might not be too much of differences between pixel 8 Pro and iPhone 15 pro Max, but but one should go for pixel because of following reasons:
1. Better value for money
2. 7 year's updates shows this phone will be at another level by each year passing.
3. Pixels are all about software magic which gives immense possibilities of improvement.
iPhone doesn't upgrade itself much but expects you to upgrade yours one. At your cost ofcourse 😊
