For astro-photography, there is a special mode on the S24 hidden away in Expert Raw (I really wish they'd merge it with Pro mode!)
You can choose from 4/7/10 minute exposures, and it overlays a cool constellation map - check it out.

Could the shaki-ness be more on S24U and P8Pro because both are mounted on extreme ends of your tripod, while iPhone is in the middle?

My issue with Samsung has always been the software. 6-12 months behind in mainline Android updates and the continued insistence to push rebranded Samsung bloatware on customers. Even with the hardware quality, I stick with "stock" OS phones like Pixel and IOS.
