I love breakfasts that I can make ahead and are ready in the morning when I wake up. For this, you simply stir the chia seeds and almond milk together, microwave it all for a few seconds and let it sit in the fridge overnight. The chia seeds and almond milk work their magic and then voila! The next day you will have a lovely, thickened pudding which you can lightly top with some fruit or cacao nibs. Be sure to heat the milk until it is HOT and then refrigerate the pudding. Also make sure to stir very well before chilling.

Low Carb Overnight Almond Chia Pudding

Ingredients

Almond Milk (Vanilla/Unsweetened)
Chia Seeds
Raw Blackberries
Cacao Nibs
Stevia Liquid

Instructions

1. Mix chia seeds, almond milk, and stevia together in a bowl. Microwave in 45 second intervals until mixture is HOT, stirring in between each time. Cover bowl with plastic wrap and let it sit in the fridge overnight. Make sure to stir very well before chilling so all the seeds can rehydrate.

2. Place pudding in individual cups and top with berries and cacao nibs as desired!

I make this all the time since starting Keto .. And I mix it up with chocolate or peppermint extract. .

Wait chia seeds are pretty high in carbs....12 grams for 1oz
