Yeah, you certainly have this dialed in. I did competition BBQ (KCBS) for many years....1996 through 2015, and we always did them the sticky method. A little bit different than how you show it, but essentially the same way. My neighbor who is a great cook does them the Grilled method, pretty much like you did it, and his are as good as it gets. You know what you are doing, and your videos are so good. Informative, and entertaining. I love them Keep up the good work.

My top pick would be the grilled one. There’s something in that smoke flavour that I like but seemed like the smoked one had too much of that goodness. Awesome video, Roel.

when you rest them for half an hour in aliminum foil, will there still warm enought to eat?

How long does it take for the bbq to get to 120 Celsius? In my experience it always takes ages and I run out of time and then I put the ribs on probably too soon, when the temperature is not yet high enough. As a result the smoking process takes very long and the ribs get kind of dry.

How do you do this?
