I bought fresh, wild caught cod today. So, I went to YouTube and searched for, "Cooking fresh cod." Your presentation is the first one that popped up and it's exactly what I was looking for. It's all in the timing, and you directed us perfectly. Thanks, Albert.

This is a fantastic tutorial on cooking white fish in a frying pan. So comprehensive and not so much as one wasted word.

You have such a positive attitude, I enjoy watching you cook. I have never cooked fish before in a frying pan and your recipes for cod came out so beautiful and tasty. I bought a t-shirt because I am so grateful for your easy and precise instructions. Thank you!

Excellent video! Enjoyed watching the whole video without fast forwarding once ( which is what I usually do....). Really informative, and easy to understand. Thank you!

This was the perfect simple recipe I needed. I tend to forget the cod needs to be fully dried first and doesn’t require very long on each side. I used the first technique and they came out so good! It even had the crisp on it. This was my first time using flour on cod. Thank you for this helpful video!🙏🏾

If you put a wire rack (upside-down) on the paper towels, it allows leftover oil to drain away from the fillets after cooking without the fillets sitting on an oil-soaked paper towel until plating.

I have a small wire rack from a toaster oven specifically for this.

Thank you so much for this video. I can cook pretty much any kind of seafood and fish, octopus, calamari, salmon, whole fish with the head like the red snapper... But for the life of me, I have never been able to cook cod. Now I can, and thanks to you, it came out perfect! You are a God send! Love your videos and your recipes, I am a big fan now!

Thank you!!! Last time I cooked cod I must’ve overcooked it and it came out hard and rubbery, I had to throw half of it out, it was inedible. So I tried again — but found your video first, I tried your 2nd method and it came out PERFECT!! Your tips and techniques and the time of cooking worked really well. Those are great tips on padding the moisture off first, the cooking time based on the thickness, and getting the pan hot first — it all made for perfectly cooked delicious cod! I was so happy how it came out. Thank you again!! 😊

Love your cod recipes. Will be making it tonight. Thanks for the tip about patting the cod dry. I always wondered why my cod never seared. Too much water in it. Got it now. That you!

Albert, thank you so much! I just tried all three recipes and La Plancha was my favorite by far. My cod was not frozen (I wouldn't dare say "fresh" since it was from the supermarket.) I had exactly 3 pieces which were about half-inch thick. They cooked in no time and all turned out delicious. From now on, I'll be cooking la plancha style.
