Personally, I cook my sauce for 2 hrs, then strain it through a sieve, I am then left with a thick sauce, that does not wet the dough.

The sauce is super thin, should it not be a little more concentrated? I just imagine this sauces water content cooking off in the 900 degree heat and leaving almost no tomato behind.
