Love cooking on a Weber. I don’t care how much technology for smokers and grills that they come up with, the Weber is perfect and there is no reason to get anything else. Also great video. I tend to do avoid direct heat and use fewer coals and just cook offset with some wood for a little smoke. I will do my next one with your technique.

Finally somebody who doesn't smoke it or wrap it. Similar to the way I grill it here in Cali. I like mine a little more crusty but do stand it up on edge to get flame on it. Bravo bro!

I'm from Santa Maria California Home of the tri tip. MEDIUM that's a perfect tri tip only difference is I don't need to check the temp I've been doing it so long

I am pretty sure it’s your brand that I got, the Santa Maria marinated, and steakhouse marinated tri tips; were pretty good. I would buy the steak house marinated tri tip again. The Santa Maria had too much flavor penetration to have as a roast, but would make great fajitas or sandwiches

I worked as a cook in a dinner house chain in California called Ruben’s and we served tri tip and it was on the menu as Plank Steak for two. I cooked hundreds of them. It was a poor man’s Chateaubriand. Tri Tip has always been popular in California especially Santa Marie style.
