Taking the time to fix the US flag was awesome Kent. A lot would have just taken it down rather than take the time to secure it again. Thank you from a retired veteran for being a true patriot. Your tri-tip steak sandwich has me drowning on my own drool. My wife says, yes, you need to make that and I surely will. Thank you again and watch out for the Beag’s 8 foot tongue. Take it from a guy who has been doing tri tip for 20 years here in CA, no matter how you cook it, the most important thing about tri tip is how it is sliced, it's two muscles combined, and always, ALWAYS cut against the grain. You can cut it thin, thick, use it as French dip, but always cut against the grain.

Tri Tip to California is what brisket is to Texas, our official BBQ of choice. And it is one of the most “beefy” tasting of all the cuts.
It all started in Santa Maria in the that 1950’s at a butcher shop where it was mostly ground up for hamburger. The story is one fo the workers would cook it whole and then cut it up as samples. It got to the point folks where requesting it and the rest is history! Traditionally it is cooked on a grate that can be raised up and down over a red oak fire, so it can go from high above the coals and get plenty of smoke to down nearer to the fire to sear it. (Basically they were doing “reverse sear” long before it was a thing.) There is even a specific kind of grill called a Santa Maria Grill that a few grill makes provide.
For me it is the most versatile cuts of beef. I smoke it on my pellet grill, roast it, grill it whole, cut it into steaks and cook it in butter with a cast iron pan, slice it thin before cooking and marinate it for fajitas, put it in chili…. On and on.
The best part is it is often the least expensive cut you can find, with Choice sometimes going for as little as $5 a pound.

We purchased a BlactStone griddle this summer. We like it, especially my husband. That gives me a break from cooking and cleaning up the stove in the kitchen. He makes breakfast on the weekends when he's not working. In the evenings he will make all kinds of stuff for supper. This sandwich makes my mouth water. Wow. Love the happy dance shoes. My husband works 10-13 hours a day in his safety toe boots. Love those fur friends. So adorable. Let's all pray for our Country. God Bless and God Bless America.

I guess the Beag was getting anxious for his little taste of cow! Caught him licking the uncut tri-tip.

And between that and a friend of mine who also had a beagle, maybe they just naturally love tri-tip. I saw my friend's dog actually snatch a whole tri-tip off the grill!
