How To Make Tabbouleh / Tabouleh / Tabouli Parsley Salad Recipe - No matter what you call this parsley and bulger salad; it tastes great! This is the perfect salad to stuff into your chicken shawarma wrap.
Ingredients
75 mL (⅓ cup) extra virgin olive oil
45 ml (3 Tbsp) lemon juice
60 mL (¼ cup) extra fine bulgur wheat
1 bunch parsley, about 2 cups chopped
1-2  tomatoes
2 whole green onions
Fresh mint leaves, optional
Salt and pepper to taste

Method:
In a small bowl, mix together the bulgur, olive oil, and lemon juice; let it soak until it is soft and plumped, about 15 minutes.
Finely chop the parsley, onions, tomato, and mint, and place in serving bowl.
Season with salt and pepper, and then pour in the bulgur mixture.
Gently toss to combine.
Place in the fridge for an hour or two to allow the flavours to combine.

I'm Lebanese and I must say that tomato and mint are definitely not optional ingredients. Onions are normally used instead of spring onions, although I've seen both versions being used. I would recommend (although not many places do this) to use sumac and a little bit of pomegranate molasses (both of which are normally used for fattoush). All in all though, everyone should make the tabouleh the way they want to their own tastes and preferences!

I've been making Tabouleh for years. It's my favourite salad, Whenever I feel a bit under par, I make a big bowl of tabouleh and binge on it. That gives me the vitamins I need to feel healthy again.

hi glen usually i soak the bulgur in the tomato rather than the lemon, this is an interesting method, i'll have to try it. but nobody tops my moms!!!
