Turkish white cheese (or feta cheese or mix it with mozzarella)
Chopped parsley (optional but recommended)
For the egg wash: egg yolk and 1 tbsp milk.

We used filo instead of puff pastry. Filled with spiced ground lamb cooked dried in tomato puree spices & better.
Excellent. This reminds us of spakopita...Greek feta cheese, alittle parmasan & mozzarella mixed into chopped spinach.
