for those who didn't understand, she said she grabbed the traditional dishes and played around with the ingredients... meaning she changed a few things and added somethings, so yes that's a not a traditional tortilla española, but she's not wrong on how you make it, she just added cheese and ham, which probably test better! the way she made aborrajados is even different, i'm colombian and normally we just get the entire ripe plantain and split it down the middle and stuff the middle with cheese and guava, but colombia has many ways of making it, but you don't see me complaining, y'all need to chill lol

It really ticks me off when people go and comment about how “that’s not the traditional recipe!” And “those ingredients aren’t right!”. I appreciate different people from different cultures and countries as equals and I don’t get why we can’t celebrate multiple cultures in one dish, instead of doing it the ‘traditional’ way. Maybe a traditional dish will be made by someone from that country, but who says that they can’t change the ingredients if they want to? Or incorporate other cultures and twists to their dish? Respect each other for who they are.

I loved this video, and the discussion as well. I teared up and had to pause when you stated "every dish has a message of someone's story". That's so true and hits home in a very poignant way. My hubby is from Ecuador, and my in-laws embraced me immediately into their family. Everytime one of my in-laws share a recipe with me, they tell me the story behind it. How it was their mama's favorite, or how it got them through harsh winters, or how they always add this or that because it reminds them of home and family.
After I heard you make that statement, I tearfully and agreeably subscribed.
We are all just people with a story to tell. And thank God, food is a universal language.
