This feels like the tip about "triple searing" steak. I've worked food service forever and I never heard about that. The fact you sous vide cooked a package that's meant for cold storage is a red flag. Also the width of bacon slices means that the crunchy contrast means next to nothing. It comes in that pack for freshness. Not because it's sous vide safe

If you need a large batch, lay it all out on a large cookie sheet, bake at 400 until desired crispness, usually somewhere in the 15-25 minute range.
For small batch, fry it in a cast iron skillet, in hot bacon grease you already have saved up from the last batch. Crispy and yummy. 👍🏻

Just throw your bacon on a parchment lined baking sheet. Put it in the oven at 350° but don’t preheat the oven. Put the bacon in the oven while the oven is cold. Flip the bacon every 5-7 minutes until it’s just about as done as you want it. Pull it out and lay it on a cooling rack or some paper towels to let the grease run off and the bacon crisp up.

You have to be careful with the packaging which probably isn't made for sous you will get plastic in your food. Put the bacon in BPA free bags only.

bro. those bags arent su vide bags. those bags have a different type of plastic and different type of adhesive holding them closed. the reason the inside is usually so sloshy sometimes especially when its past date is because the bacon or whatever meat inside went bad or the adhesive failed whichever comes first. this is not safe its like cooking a frozen steak still vacuum sealed. this is seriously dangerous DO NOT DO THIS.
