I am always confused by the idea pasta water has enough starch to thicken an emulsion.
It seems to me that the cooked pasta itself would have much more starch clinging to it than is in the water.
I think the great advantage of the pasta water is that it's already boiling hot and doesn't slow down the cooking process.
