I’m sure they are great in green juice & cheap to grow - I would suggest after they sprout putting them in sun a few hours a day to develop more nutrients.

I am growing some right now and they're all green and lush. There are conflicting info however about the optimal state of ripeness in regards to nutrition. First leaves, second leaves... I am letting some grow a bit more while munching the earlier ones :)

Great info except I would NEVER use an aluminum pan. Aluminum leaches into the soil and is very harmful to health.
