Great, easy, vegan mayonnaise recipe. I did reduce the chickpea liquid from the can on the stove so it was nice and thick. It worked fast in my ordinary blender. I added a generous teaspoon of Dijon mustard, a little of maple syrup, 2 cloves of garlic, salt & black pepper, lemon juice, little distilled vinegar and rice bran oil. Prefer this recipe to my usual vegan mayonnaise ones. Thank you. 😊

No need to drizzle the oil in slowly. You can make this in half the time. Dump ALL the ingredients in to a bowl. The oil naturally floats on top. Put your blender right to the bottom of the bowl and start it up. It frags the oil to the bottom and starts emulsifying it immediately.

I just finished making it, I am impressed, so easy and the taste is like Hellman's. I used dijon mustard for lack of mustard powder and it still worked! Thank you

Just tried and it worked out great. A tad tangy for the little ones though so I think next time I'm going to swap out some of the ACV with lemon juice instead and see how that goes. Also, I found I didn't need any sweetener or sugar at all, making this a great keto mayo for anyone who has any issues with eggs.

One can also thicken it up with a pinch of Glucomannan (a yam-based thickener).

Can I do this without the corn syrup?
EDIT: I made this tonight using maple syrup mentioned on the website you could replace corn syrup by that (added 2tsp and it was a bit too sweet for me so I recommend adding 1tsp at a time or half a tsp at a time and just add to your taste in the end)
It was so so easy to make took 10min max (only like 5min to whip up) I recommend this to everyone even if your not vegan it just taste so so good

If your mayo becomes runny and doesn’t seem to thicken use xanthan gum (very very little). If it turns into a big blob. Add more water or Aquafaba then blend and spices and lemon again. I added hot sauce. Friends loved it for sushi and salads.

Great recipe! But no need to slowly drizzle in the oil. You can just add all the ingredients, including all of the oil, to the jar before you start blending. Just make sure to start blending from the bottom, because that's where all the non-oil ingredients will be.

I tried it and it didn't thicken at all. Looked like a salad dressing. I used more lemon juice instead of vinegar, maybe that's why?

I tried this with 3 different blenders and it didn't work. Cuisinart hand mixer, bullet and finally Vitamix. Still didn't get thick
