Anne,
I grew up in Mississippi. My recipe evolved from lard. I use peanut oil. I use a Dutch oven. I put all my dry ingredients in a plastic bag. I marinate the chicken in milk or buttermilk for a couple hours then into the bag and shake it all up.
When the chicken is drain on the rack I put wedge potatoes into the oil. Once they float to the surface, I check to see it they are done. I serve with a lettuce salad.
When I was growing up we had this all the time but now only a few times a year.

I miss the fried chicken dinners at my great grandmother's house in Montana. Always crispy and delicious with mashed potatoes, fresh or canned garden green beans and home made bread. All done on a wood cookstove. The family bought her an electric stove when she was in her 70's and the only thing she would use it for was keeping things warm when the warmer on the wood stove got full. Thank you for sharing this great recipe Anne.

What memories. Sunday mornings, my mom and dad fried chicken before church. When we got home, they then did a pot of rice, gravy from the chicken frying, and biscuits. Really rings home with what you said about starches stretching the meal. Rattlesnake green beans was the staple vegetable. Then, as if you weren't stuffed enough, banana pudding for desert. I could literally smell our Sundays watching you cook. God bless. Love your channel and all you are doing.

Someone might have already suggested this but next time you make it try soaking your chicken in the buttermilk overnight in fridge or at least for several hours. Learned this from our older generation at our local county extention. Adds flavor.

My grandma made depression chicken. She fried the chicken after dredging in flour and seasoning. She then put in the oven in a covered Casserole dish. It was so tender and delicious.

I still save my oils in jars. One for fish frying, one for chicken. Always powder garlic snd cayenne pepper, even with fries. You make my mouth water girl! Nice job!👍😍😋

I can buy lard by the Gallon tub or by the one pound block also the exp date on the one I just got is two years out. But use what you got. My granny used lard for everything. Great recipe and story!

That is what I was raised on. Mom cooked a lot like you. You add "about this much" salt or whatever. I almost felt that I was smelling that chicken cooking. I am hungry THANKS!

Use a cheesecloth to filter out your frying oil of you plan to reuse it again. Fried foods were a fantastic staple. Shortening, tallow or lard is the legit way to go when deep frying.
