The Mexican food I’m FALLing for

On my journey to fall for Mexican food from my childhood. This time it’s enchiladas Rojas. Butternut squash, chipotle~guajillo, braised chuck, oaxaca.

Butternut enchilada sauce
Ingredients:
-1 C roasted butternut
-1 Guajillo reconstituted
-1 tbsp chipotle
-1 tsp cumin
-1/2 yellow onion cooked
-4 cloves garlic cooked
-2C stock or til smooth (i used braise liquid)
-blend
-salt to taste
-mix in diced roasted butternut

I saw your gluten video. My brother one can eat a little gluten and gluten is not an allergy rather intolerance just like from milk.
And then people are not intolerant to all kinds of gluten sometimes.

But letting you know intolerance and allergies are two different things
I can consume a little gluten and be really fine.
So it is not like how you think it is.
