There is only one way to roast a chicken so that its skin is crisp.
And is there any more beautiful, aromatic or (let’s use the word) sexy bird to come from the oven than a perfectly roasted chicken, its brown the color of a Capuchin’s robe, its scent of all the perfumes of the hearth?

butter/herb/lemon/garlic mix under skin olive oil and salt pepper and poultry season on top.

Oh my goodness, that looks soo delicious. I am fixing this tonight and am going to try to loosen the skin a bit before drying to see if it makes it a little easier.

Allowing the chicken to cool down to eating temperature provides a firmer texture for slicing ( portioning). As an option allows breast, thighs to be boned for boneless portions. If possible initial cooling down briefly in the fridge may help. I wonder if cooking “ beer can” style might also improve texture for crispy skin.

As a 'Danish' person, I LOVE butter on everything. But to dry out the skin and then spend butter on it is counterproductive.
Better to carefully slide your fingers under the skin and insert the butter directly onto the meat.

Ok, it looks good, and it might taste like everything he shoved up its chicken hole, but it will not have any seasoning other than the salt and pepper that he put on its skin. I don't know, how is that going to absorb that and such a little amount. Did he brine it before he put it in the fridge to dry it out? That's the only way I see that it will have that kind of seasoning all the way through.

I set my oven to 425 degrees Celsius and the oven melted but the chicken was still tender! 😉

The cross contamination is real. He wiped his chicken juiced hands in at towel. Then went for the pepper mill and contaminated the salt in the ramekin.
