What is Coconut Flour?

It’s made from the pulp of the coconut that’s leftover after making coconut milk. The pulp is dried out and ground up into a fine, soft flour, which is great for making light, fluffy pancakes.

COCONUT FLOUR PANCAKES
1/3 cup coconut flour
1 tablespoon baking powder
pinch of salt
1/3 cup unsweetened almond milk
2 eggs
1 teaspoon vanilla extract
1 tablespoon maple syrup

In a large bowl, combine coconut flour, baking powder, and salt. Gently whisk all ingredients together with a fork.

In a separate bowl or spouted cup combine almond milk, eggs, maple syrup, and vanilla extract.

Add the wet ingredients to the dry ingredients and gently stir until everything has come together.

Heat a medium non-stick skillet over medium heat and coat with butter or coconut oil. Scoop 1/4 cup pancake batter and pour into the pan to form a small to medium-sized pancake. Cook for 2-3 minutes or until the edges begin to puff and the bottom is golden brown. Flip and cook for another two minutes or until cooked through. Repeat until you have worked through all the batter.

Serve pancakes with your favorite toppings and enjoy!

This recipe makes 6 small to medium-sized pancakes. One serving is 3 pancakes or half of the recipe.

I'm obsessed with coconut! 😍 You can use it for food in so many different ways such as flour, oil, milk... You can put it on skin - it works AMAZINGLY. And smell is wonderful. Also you can make bowls and other stuff from it. 🥥 And it's healthy perfect gift from nature!

Made them this morning. Pretty darn good with some Lily's chocolate chips as add-in. Always found coconut flour doesn't stick together great so basically formed them by hand like a cookie then threw them in pan.

Hi Dani, first off, I'm blessed I found your YouTube channel. I'm very big on eating healthy and always hungry for learning. I've also lost a lot of weight and almost at my goal weight. I work a job Mon-Fri where things can get hectic and I wake up around 5am. Thank you for the recipe!! I made it but added chia seeds and cottage cheese to boost fiber and protein and made them savory by adding garlic powder and cheddar cheese!!! I was pleasantly surprised at how delicious they turned out and the texture was good too!!!

I enjoy cooking and baking a lot, especially during the colder weather. I recreated your recipe exactly as described and my result was too dry. It seems to be lacking enough fat to give it that smooth and light texture, so I'll be trying different combos to see which is best: adding another egg, adding butter, adding sour cream, adding yogurt adding heavy cream. If I remember where I got this recipe from, I'll post which I found worked best for me. Thank you so much for these recipes! They're a good base/

I tried something by which seemed to work for my pancakes. I divided the remaining residue into 2 &1/2 tbsp packs and kept them in the freezer.
Just before using it I lightly roasted it on a warm skillet
Must say they turned out right. Thanks for all the recipes you share....I really enjoy making them.
