Mixing Pancakes the Perfect Amount

Pancakes (yield: 1 dozen pancakes)
2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil

1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.

Here's another tip, overmixing works really well if you make them thin, it gives more of a crepe feel rather than something being done wrong

This is why my pancakes always turned out fluffy 😂 I never purposely did it it’s just after a while I’d get tired of mixing and would just think “I’m sure the rest of the lumps won’t make much a difference”

Okay so hear me out.. I always “over mix” mine. But I use this protein pancake mix and I make waffles with it. I always overcook them to where they’re crunchy (and I add some chocolate chips before I cook them) and then I top them with a tiny tiny tiny amount of maple syrup and I’m not even kidding. They taste exactly like chocolate chip cookies. Like exactly the same. Crunchy on the outside but chewy on the inside. I would say I like them 10x more than any cookie I’ve ever had and I used to love cookies more than anything. I’d take these over any cookie I was offered. They’re literally perfect.

I sift my flour before adding it to the bowl. No clumps, and not over mixed. :)

BRO YOU’RE A LITERAL LIFE SAVER- I had to make pancakes for my sister and I was freaking out because i suck at cooking and I can’t even read instructions- plus my sister is super picky so it has to be PERFECT- anyways I came across this and now I can make pancakes 😀👍

I separate the egg whites from the yolk, whisk them until they are stiff and fluffy and them fold them into the batter. Always a safe bet to make them fluffy

Love this! I learned the hard way one Saturday morning. Pancakes were chewy and almost rubbery in texture. Did it again; mixed until flour was not visible and the pancakes came out perfect! 😊

This is so true! In culinary school they tell you not to overmix and to let the batter sit for a few minutes to dissolve the lumps! (Dont let it sit TOO long or it’ll use up a good amount of the leavening if your baking powder isn’t double acting. )

(the reason over mixing is bad is because gluten is activated by agitation and liquid- and gluten is responsible for the texture, high gluten= chewy and gummy)
