We live a little over an hour away from Raw Farms in Fresno, CA. It truly upsets me at how expensive raw dairy is. We can’t afford it. We already spend a ton of money on a grass fed grass finished meat subscription. A gallon on raw milk here is 17$. Raw cream is 13$ for a pint. It’s obscene.

Australia had a milk company that used pressure instead of heat to pasteurise milk, so you get the benefits of pasteurisation without the negatives. They’ve just gone bankrupt though

I used to work in a dairy, and technically the min temp for pasteurized is 182 degrees. All milk has coli or coliform bacteria. E coli only comes from manure, so it depends on the farmers best practices if any manure gets into the milk.

This logic is applicable for milk perhaps but not for butter because the whey fraction of butter is negligible.

Over the many years of visiting the US from the UK, it's amazing just how successful the manufacturers have been in ramming 'spreads' into the consumers basket. The range is crazy, but it's all highly processed, high ingredient count, flavour-added, this-added, that-added and it's driven pure butter into the background. Advertising Is King! Even when Cadbury chocolate became more mainstream in the USA, it's a different recipe than the original UK version; added-this, added-that BS.

Raw butter would be great but finding it is another issue. Erowhon might stock it but I have to wonder at what price? That Venice store is jokingly known for their $30 smoothies and valet parking. One shouldn’t have to be so darned wealthy to access healthy food.

What about low temperature pasteurization? Like, below 150F

(note: it does kill all the germs if you give it enough time.. for those who want to panic about any cooking temp below 165F)

As a person who has a qualification in Australia to make milk safe for mass consumption through pasteurisation for people to drink and eat as yogurt...what are your thoughts on this? Because what i was taught was due to the volume and pipework, pumps, valves etc that the milk must go thru, to kill harmful bacteria, we need to heat the milk to kill harmful bacteria and use harsh chemicals to flush the residues left in all the pipes etc followed by a hot water flush before starting production. I grew up drinking milk and butter direct from our house cow. Nothing was pasteurised, and we all grew up stronger and bigger then most people. There is no doubt in my mind that is whole foods are the best...but can we give masses milk, cream and yogurts without pasteurisation?

But butter is mostly fat with small amounts of protein. Surely it makes little difference?

The difference in the two is that heat destroys protein. I learned that in my biology class. If you cook your steak well done, what you're really eating is shoe leather. It's also just as nutritious.

while raw butter may taste better (wouldn't know I have never tasted it) there is a reason pasteurization is a thing. I found this on Google...Milk that is to be made into butter is usually pasteurized during production to kill pathogenic bacteria and other microbes. Butter made from raw milk is very rare and can be dangerous because it is made from unpasteurized milk.

Never knew about this. If I use raw butter for cooking, would it have the same effect as pasteurizing it tho? Let’s say I’m cooking a chicken or steak in butter, would it still be better to use raw butter?
