Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 1 cup fresh spinach, chopped
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)

I'm 71 and only recently have taken to cooking tasty dishes thanks to YouTube. I tried your Beef in Oyster Sauce, one word WOW !! Now having Subbed will definitely be trying this as Italian Food is up there with the best. Thanks Rik you're a star.

I made this a week or so ago. I did not bother with the sun dried tomatoes but otherwise more or less the same. I used frozen spinach, added mushrooms, and parmesan cheese. I find this is best done with chicken thighs and cooked in bulk 6-8 pieces. Save the breasts for other dishes. Let the chicken simmer in the sauce for at least 30mins when returned to the pan. Good as left overs too.
