As a skier, F-35s use the ski jump because they like skiing. Obviously.

Plus it's far more fuel efficient to launch them than to have them take off vertically, that means more range.

Also, the F-35 comes in 3 main varieties.
F-35A land based version. Operated by USAF
F-35B short take off vertical landing version. Operated by USMC.
F-35C carrier version. Operated by USN.

Compared to flat deck, non catapult launches, yes they are better but compared to catapult-assisted takeoff, they are inferior by far. Ski jump planes have to carry a lighter load, far less ordinance and less fuel on take off, and usually must be refueled before the mission. Flat deck carriers are more about helicopters that also support vtol.

The ramp means less fuel and less ordinance - not more - than a catapult

With a catapult planes can carry more fuel and ordinance. The use less fuel for takeoff.

I was gonna say the Hawkeye can't launch from USN Amphib assault ships but we have plenty of supercarriers. But now I see perhaps the disadvantage is the other nations' ski-ramp carriers can't do it either. (?)

None of our carriers have this ski jump ramp. All aircraft are launched by catapult
