Ingredients

1 tbsp oil
2 Bay Leaves
1 tbsp Chopped Garlic
Mushrooms
Carrot
Onions
Spring Onions
Celery
Cauliflower
1.5 ltrs Water

Method

- Heat oil in a pan. Add Bay leaves and chopped garlic to it.
- Add the vegetables along with 1.5 liters of water.
- Cover it and allow it to boil for 45 mins to an Hour.
- Strain the Vegetable and the stock is ready to be used.

After straining the vegetable we can Just grind them mix with rice flour and make thick chila or mix with wheat flour and make paratha....or make sambhar with that adding some lentils and sambhar masala. Kofta, kabab, tikka, basic sabji(dry or gravy).

I love this recipe! I used this for my grandma after she was in the ER, and I puréed the rest of the vegetables to make it easier for her to eat. Couple months later, (today), I made it again except this time I just roughly chopped everything, including the garlic to make it tastier to eat!! I also added some fried onions, fish sauce and chicken broth to make it extra yummy!

they dont seem to be the remains of veggies...they were veggies themselves!

After straining the stock we can just stir fry the vegs and use them , this is the concept of Zero waste . thanks Rajshri food for sharing

You can also freeze it in half cup or one cup portions and just toss it frozen into a dish when you need it.

I make my stock in pressure cooker. Doesn't feel any different. I just do not let it become totally squishy so that i can strain it.

Can you explain where we can use vegetables stocks apart from soup?
