Ingredients

For the frites / french fry
-Russet potatoes
-Frying oil (peanut oil, beef tallow, vegetable oil— many options 😁)
-Salt (optional truffle salt)

For the sauce
-Butter
-Shallot
-Multicolor peppercorn
-Cognac
-Heavy cream
-salt

For the steak
-Ribeye, filet mignon, NY strip
-Coarse salt / kosher salt
-Beef tallow (or other oil to sear)
-Butter
-Garlic
-Rosemary
-Thyme

Chives for garnish

Gorgeously done. If anyone wants a cheat sheet about what she did…

Fries : She blanched her potato sticks in boiling water for about 4 minutes, then let them cool and dry. She then double fried them in oil, once at a low temp (275f) for about 5 minutes, and then again at a higher temp (350f) for about 5-7 minutes until visibly browned and crispy. She then salted while still hot so the salt will stick. (Pro tip, french fries work well with very fine salt. Popcorn salt is excellent for french fries if you can find it.

Steak: Dry brine a gorgeous new york strip steak in the fridge for atleast 3 hours but ideally overnight. You can use any cut, but I think she used strip. Dry brining just means salting and leaving uncovered in the fridge. It draws out the moisture and makes a great crust. She cooked to a beautiful medium rare in a screaming hot cast iron pan. Sear in cooking oil, and in the last two or so minutes add butter, garlic and fresh thyme to baste over steak while it finishes. Adding the butter too early will overly burn the butter instead of creating a beautiful brown butter. In the video she chose a steak with a large fat cap still on it, and then rendered and crisped the fat in the pan. If your steak has a fat cap like hers, dont skip that step

Au poivre sauce : dice shallot and saute in a healthy amount of butter. Smash a lot of black, green, and red peppercorn with a mortal and pestle. Use more than your think you need, maybe like 1/4 cup or more. (i think she used a molcajete, which is a special mortar made from volcanic rock which is really coarse, which makes it easier.) Add beef stock or demi reduction. Add a shot or so of bourbon, and then cook off the alcohol. She set the bourbon on fire for show. its faster than cooking it down, but makes no difference to the final product, the alcohol will cook off no matter what if you give it time. Finally add some heavy cream, and let it cook down for a couple minutes. Be careful with your temp after you add the cream. You want to reduce but if you boil too aggressively, the sauce can split.

Now your’e done. Its a simple recipe with only a few ingredients, and its so rich and delicious. You can probably skip blanching the potatoes in water since you are double frying, first at a lower temp to cook the inside, then at a higher temp to crisp, this essentially does the same task as blanching. This saves you the time of boiling a whole extra pot of water and then waiting for your fries to dry.
