The one where Matt gets his hands on some lovely Black Garlic from his lovely friend, Shiv, so he decides to put it to the test with three lovely simple recipes - Black Garlic Chicken Thighs, Crispy Black Garlic Tofu, and Black Garlic Mayo!

Ingredients
For the Black Garlic Mayo:
6 x Black Garlic Cloves
2 x Egg Yolks
1 Tsp Lemon Juice
125ml Olive Oil
2 Tsp Dijon or English Mustard
1 tsp Salt
For the Black Garlic Chicken Thighs:
Pre-heat oven to 190°c/375°F/Gas Mark 5.
4 x Chicken Thighs - Skin on
3 x Garlic Cloves
3 x Black Garlic Cloves
3 Tbsp Soy Sauce
1 Tbsp Sesame Oil
1 Tbsp Fish Suace
2 Tbsp Honey
1 Tbsp Hoisin Sauce
1 Tsp Salt
For the Crispy Fried Black Garlic Tofu:
1 Block of Firm Tofu
6 x Black Garlic Cloves
3 Tbsp Sesame Oil
2 Tbsp Soy Sauce
1 Tbsp Maple Syrup
4 Tbsp Cornflour
2 Tsp Chinese Five Spice
