Tip...start with the dip cookies so while they are in the fridge hardening you can work on the other cookies!

1 c soft unsalted butter
1/2 c powdered sugar
1/2 tsp salt
1 tsp vanilla extract
Cream together in a bowl then add:
2 1/4 c flour
Mix well. Bake 15 mins @180 degrèes.

Dough Recipe:
1 cup soft unsalted butter
1/2 cup confectioners sugar
1/2 tsp salt
1 tsp vanilla extract
2 1/4 cup all purpose flour

Bake 356 F = 180 C

I use an all natural, no sugar added fruit spread, like Polaner All-Fruit. I have found that the regular jams and jellies tend to turn into "gummy" candy. This is my favorite cookie and I have experimented adding numerous items to the cookie dough including dried, exotic fruits and using fruit juices instead of water in the icing. There are so many things you can do with this basic recipe. I hope this helps anyone who wants to experiment on their own. Happy baking.

Just tried this recipe today and made a batch of the hazelnut shortbread with the chocolate dip. I haven't made cookies in years. They turned out marvelous I will be making these cookies for Christmas and all year long.

I use almond extract in the icing. It adds a very nice addition to the raspberry jam. These cookies are always a huge hit at the holidays. My family and friends love them. There are never any left. Thank you for sharing! Merry Christmas =)

Mmmm, these are amazing! For the raspberry thumbprint cookies I made an orange flavored glaze by combining the powder sugar with orange juice rather than water...gives the cookie a nice zing of extra flavor. Happy Holidays!

Love this. I wont make the last variation with hazelnuts but walnuts instead. Hazelnuts i do not care for but I love walnuts. Im making 8-9 goodie boxes for gifts this year and i am having a hard time physically and these cookies will replace cutting out 6 dozen cookies. I especially love the raspberry thumbprints. Never baked cookies from scratch but I know my way around a kitchen. Tried the trio of cookies and they come out great!! I used European style butter. They look pretty good and taste great!! An extremely successful first attempt, thanks for the recipe and simple to follow
