Salt & Pepper Smoked Pork Ribs

How to Make Smoked Salt & Pepper Pork Ribs:
* Simple trim the ribs according to your liking.
* Apply a small layer of mustard or your binder of choice.
* Apply a good layer of 16-mesh course black pepper 1st then a good layer of course sea salt 2nd.
* Once seasoned let the ribs sit on the chopping block on the counter for 30-40 minutes to start the sweating process (extracting moisture).
* Bring your smoker up to 225*-235* using a mild smoking wood; i.e apple, peach, cherry etc (fruit bearing is best).
* Then place the ribs in the smoker using the smoker and wood choice you desire. In this video I am using the Weber Kettle Charcoal Grill with apple & cherry.
* Check at the 2-hr mark and if the bark is forming start spritzing only the areas where bark is forming.
* Continue this process every hour until it is time to wrap the ribs in foil.
* At approximately the 5-hr mark wrap the ribs in foil and place back in the smoker for an hour followed by opening up the foil and leaving the ribs in the smoker for another 15-20 minutes.
* Next take the ribs off and tent them in foil and let rest on the countertop for 15-20 minutes.
* After resting 15-20 minutes unwrap cut and enjoy.
