How to Make Smoked Salt and Pepper Baby Back Pork Ribs

These pork ribs only need 3 ingredients and they are absolutely DELICIOUS! In this video i'm going to show you how to make smoked salt and pepper baby back pork ribs!

You can use this recipe and method on any cut of pork ribs, but in this video i'm using baby back pork ribs.

See below for some important points from the video:

- Salt & pepper, 50/50 mix by weight! If using normal table salt, halve the weight of the salt as it's much more intense than kosher salt
- I ran my pit at 275F/135c for this pork rib cook
- My method for pork ribs is smoke until you are happy with the colour, wrap until they are tender around 205F/96c internal and then finish with a sauce/glaze if you like
- If you want some sweeter pork ribs, add some honey and brown sugar to the foil wrap with the butter

Is all that white smoke at 3:40 okay? I got paranoid when i put a wood chunk directly on my charcoals last night because it was producing white smoke like this. Correct me if I am wrong please!
