That's why fermenting should take place in earthen pots.

The glass one wasn't sealed properly. Also the earthenware one has a silica based glazed which makes it as if it were covered in a thin layer of glass.

But what's the black?!?! And if you see mold, it's more than just surface level. The mycelium grows deep. Do you want that for miso?!?!

Are you on the road to make kouji too? It takes some precision, but the results in flavour are uncomparable. I used to make it and it's flavourful

I fermented it for 6 months, I opened it today and found mold and liquid in the outer layer, did the fermentation fail?
