Almost Americans don't know her OSHISUSHI. Her sushi cooking is another art of sushi.
Oshi-sushi means pressed sushi. It is very old style of sushi cooking. In Japan every home have Oshi sushi formwork. when you want to make mackerel sushi, you must use Oshi sushi formwork. Vinegar pickled mackerel and sushi rice must be pressed by oshisushi formwork. This is traditional old sushi style. Real Japanese name of mackerel sushi is Battera. Battera of mackerel sushi. It is extreme delicious.
