Ingredients
1. 1 cup of risotto
2. 5-6 cups of stock
3. 2 shallots
4. 3 garlics
5. 2 cups of mushrooms
6. 1/2 cup of white wine
7. 1/4 cup of parmesan
8. 1 tbsp of truffle butter
9. 3 stems of thyme
10. Chives for garnish

Directions:
1. Cook down the mushrooms for about 7-8 minutes till browned
2. Add in your shallots and cook for 1 minute
3. Add in your garlic and thyme and cook for another minute
4. Add in your Risotto and roast for about 1-2 minutes
5. Deglaze the pan with the white wine and make sure the pan is at a medium heat
6. Add in your stock 1 ladle at a time to make sure the risotto absorbs all the stock but never too much
7. Repeat this for about 5 cups of stock till the Risotto is Al Dente. Should be about 15-20 minutes
8. When the risotto is done, add in your cheese and truffle butter. Add in a little bit more stock if the risotto tightens up and is not as cream.
9. Top with chives and Serve.
10. Enjoy!
