I went to restaurant Gordon Ramsay in London a while ago with my girlfriend, who is a vegetarian. Her veggie option was a cep and truffle risotto. I only had a forkful but it is still, to this day, the single most delicious thing I've ever tasted.

If someone sends you truffles, they are forever in your heart. That is the coolest, most thoughtful thing you can give a chef. I would die. Mostly because I don't have to pay for the truffles, which can seriously mess with your food cost.

10:28 to 12:05 was EXACTLY what I was looking for in a Risotto lesson that many vids on YouTube did not go through step by step visually. Gonna try making risotto again using your method and thanks a bunch!

Steve, I spotted your recipe exactly one year after the upload. I wanted to make something awesome for my girlfriend this Valentines, because whenever we go out to eat we’re always disappointed by the food... side note; how is it possible for trained chefs to dish up poor meals and charge for it?

Anyway, I love cooking and have been trying to get the perfect risotto for years. I managed to get all the ingredients except the elusive truffle. Instead, I got truffle and porcini infused oil.

I successfully delivered my first ‘restaurant-quality’ meal that I’ve been working towards, and your channel has played a huge part in this.

I followed up with homemade Neapolitan style pizza topped with caramelised onions, goats cheese and rocket with a balsamic glaze (because, you know, just can’t get enough of the stuff!).

Thank you Steve. You have become my go to resource for learning and inspiration. This is what learning in 2020 should look like.

When I watched this video, I noticed that the camera angles that captures the food looked more seemless!! I'm not sure if I just didn't notice it til now, but I appreciate all the hard work that's put into your vids!

Just discovered this channel and it is fantastic. It takes so much time and effort to plan take all these shots from different angles and then edit them all together on top of the actual cooking process. PLUS you're also talking to the camera in a calm demeanour and showcasing all the wonderful ingredients. Good job!

Thank you Stephen! I did not have arborio at home, only a black rice called "forbidden" rice, and shiitake mushrooms; however, followed all the steps, and added parsley at the end instead of the salad, and it was awesome!!! I'll definitely try the full recipe some other time

I made this tonight for my girlfriend and it came out really good, she loved it. I didn’t have truffles but it still was delicious. Thanks so much for the recipes. I’ll be making the carbonara tomorrow.

That is an awesome mushroomy scenario. I have a thing I do in risotto making, and I'm wondering what you think. Since the risotto should be served right away, and since it can be inconvenient to stand over a risotto pot for 25 minutes leading right up to dinner, I do this thing where I start the risotto a little earlier, and then when it's about half way done, I turn it off, put on a lid and let it lie. Then, when the time comes, I start it up again and take it to the finish. It always comes out perfect.

Just made this today (sans truffles) and it was delicious. Really simple, and not as time consuming as everyone always told me. Now that I'm through the fear I can't wait to experiment a bit with combinations.
