The basic ratio is 2 tablespoons of chia seeds to 1/2 cup of milk, but you can adjust the amount of milk if you're adding other ingredients that contain liquid, like yogurt or puree. INGREDIENTS (1 serving each)

Pumpkin Pie Chia Pudding:
2 Tbsp chia seeds
2 Tbsp pumpkin puree
½ tsp pumpkin pie spice
1 Tbsp maple syrup
Pinch of salt
¼ cup plain greek yogurt (equals 4 Tbsp)
⅓ cup milk of choice (or ½ cup if you like it less thick)
Toppings: walnut or pecan, coconut whipped cream

Cafe Mocha Chia Pudding:
2 Tbsp chia seeds
1 tsp instant coffee
1 tsp unsweetened cocoa powder
1 Tbsp maple syrup
Pinch of salt
¼ cup plain greek yogurt (equals 4 Tbsp)
⅓ cup milk of choice (or ½ cup if you like it less thick)
Toppings: banana, chocolate chips

Matcha Cake Chia Pudding:
2 Tbsp chia seeds
1 tsp matcha powder
¼ tsp vanilla extract
1 Tbsp maple syrup
Pinch of salt
¼ cup plain greek yogurt (equals 4 Tbsp)
⅓ cup milk of choice (or ½ cup if you like it less thick)
Toppings: strawberry, almonds
