Not sure if you've ever tried it, but I cook the whole tongue in an instapot, then peel and slice. Have done moose, elk, and cow this way. Highly recommend

I love Cows Tongue, we almost always have it for Christmas dinner, sliced up right next to the Gammon.
Except we usually brine it (can often buy them pre-brined) then either roast or smoke it, then cut it into roughly 3mm thick slices (keeping the outer layer).
The outer layer is a nice additional texture, like the skin on Salami or other cold meats.

So back in the day, I was in a silly little metal band with a few of my high school pals. We would always go to my friend Noel's house. His mother always made us tacos. We never questioned what kind of meat she was using. All we knew is that it was amazing! Until one day I saw her cutting up the actual meat for the tacos. I was stunned at what I saw. It was a tongue! My mind was going ew! but my taste buds didn't care. It was so good that despite it being a literal tongue. I to this day still ask for lengua tacos whenever I visit.

Boiled and smoked beef tong is amazing. You should totally try it. It have a long preparation time, but the result is totally worth it.

I love beef tongue. I usually make a stew with tomato sauce and black olives ( it's a popular Romanian recipe) or just boil it and eat it with mustard and mayo but there's many ways to cook it, it's quite versatile and whatever you end up doing with it it usually ends up being delicious. Pork tongue is also pretty nice.

I made chili with beef tongue not long ago and it was incredible; I ground up half of it and cubed the rest, put a good sear on it, and then braised it in tomato sauce, beer, and chili spices.

With all your cooking expertise, I'd like to see your take on a family holiday meal Guga! Two main dishes, three to four sides, and two desserts. I know some of your side dishes can be a bit heavy, but you have done some that were lighter and looked incredible. *BUT* lets throw a twist on it, max cost of $180 total for ingredients!

One of my favourite treats growing up on the farm was pickled tongue. Most common for us was actually moose tongue because we often did not butcher our own cattle very often. We usually ran only 150 to 200 head of cattle so they usually got sold. We were further ahead selling cows and then hunting for wild meat for our dinner table. Pickled tongue and wood roasted heart were our big treats after butchering an animal. Great memories 😊

In Brazil beef tongue is absolutely common and we eat it, usually in a stew with potatoes, carrots, onions and a bit of tomato sauce. My grandma makes it every now and then and it is delicious.

My mom makes this stewed. It’s almost a 100yr old recipe my mom learned from my fathers mother. Most people are very skeptical about beef tongue until they try it and they can believe how tender and full of flavor it is!

Never had cow tongue but I would love to try it. In Hyderabad, India we have a dish called nehari that is a type of soup often made with goat bones and, often, tongue. Those are always my favorite parts. They are so much more succulent than any other meat and the flavor is insane.
